Raja’s: Balinese Fine Dining at Its Best PDF Print E-mail
You know you're doing the right thing when even your competitors send their clients to you.
A case in point is Jeremy Cooper, Resident Manager of the Nusa Dua Beach Hotel & Spa, who initiated what is unanimously acclaimed by the culinary world as the only restaurant in Indonesia—or the world, for that matter—that serves Balinese fine dining within the premises of a five-star hotel.

"Hotels in Nusa dua, which in business terms are our rivals, and elsewhere in Bali send their clients here whenever they wish to get a taste of Balinese culinary," says Cooper, who came to Bali seven years ago as the hotel's chef after a stint in Thailand.

"There was a Raja's before, but it only served a potpourri of Asian food. I then proposed to the hotel's general manager that the restaurant served Balinese cuisine only. When he agreed I went around looking for recipes that define authentic Balinese fine dining," Cooper recalls.
With typical western efficiency he asked his staff members to come up with local recipes, evaluate and raise them to reach international fine dining standards.

One of which is Raja's signature dish, Bebek Betutu, a whole duck marinated in a "secret" blend of 16 Balinese spices. Wrapped in palm leaves, it is then slow-cooked. Another is the award-winning Palm Sari Ulam, which is steamed seafood in coconut curry pudding.

"Raja's offers the very best of Bali's culinary repertoire. Only the finest ingredients are used and the utmost care taken to ensure that the tastes of classic, century-old recipes are prepared and presented to perfection," says Cooper.

Cooper did not stay behind his desk but went out of his way to look for undiscovered local food himself. At one point he discovered a Balinese woman making her own version of crackers using an old Italian pasta making machine. The very same time-honored delicacy later made its way to Raja's and is now served with other Balinese dishes.

Raja's, a mixture of wooden interior and exterior with beautiful Balinese artifacts and fabrics complimenting the restaurant's décor, is just steps away from the beachfront and adjacent to the hotel's main swimming pool.

Visitors are able to dine (daily at 6.30pm-11.00pm) on the outdoor patio or inside the air-conditioned room, which seats 64 guests in total.

"Europeans and Japanese turned out to like Balinese food. Now I'm setting my sights on the world to introduce the idea of Balinese fine dining experience," says Cooper. (Garuda Indonesia Flight Magazine)
